Method
step 1
Heat the air fryer to 180C or the oven to 200C/180C fan/gas 6. Tip the fries into a heatproof dish, shake into an even layer and cook for 15 mins, turning halfway, until starting to crisp.
step 2
Meanwhile, heat the oil in a large, deep frying pan over a medium-high heat and cook the onions and peppers for 5 mins until starting to soften. Add the mince, mixed herbs and paprika, and cook until the mince is browned all over, breaking it up using a wooden spoon as you go.
step 3
Dissolve the stock cube in 150ml boiling water, then stir this into the pan with the mince. Continue to cook until the mince is fully cooked through and the liquid has thickened slightly. Season lightly.
step 4
Remove the fries from the air fryer or oven, and spoon over the mince mixture. Sprinkle over the cheese and return to the air fryer or oven for 5 mins until the cheese has melted and the mince has caramelised in spots.
step 5
Meanwhile, combine the yogurt, gherkin brine, mustard and dill, and season well. Tear off eight large outer leaves from the lettuce and set aside. If the leaves aren’t very large or have torn, patch them with some of the smaller leaves. Roughly chop the remaining lettuce.
step 6
Spoon the mince and sweet potato fry mixture over the lettuce ‘wraps’, then top with the gherkins, tomatoes, chopped lettuce and yogurt sauce. Carefully roll the wraps up to serve.
