Test Kitchen tips for making the perfect avocado toast:

  • For this recipe, we look for avocados that give slightly when gently pressed. They should be ripe enough to mash easily without feeling overly soft. If they still need ripening, you can just leave them at room temperature for a day or two.
  • A squeeze of lemon (or lime) juice does more than add freshness. Mixing it through the avocado as soon as it's mashed also helps slow down browning, so it's perfect if you're not serving it immediately.
  • Choosing a sturdy bread makes all the difference. We love sourdough or seeded bread toasted until crisp and golden, as it holds up well beneath the creamy avocado without becoming soggy.
  • For extra flavour and texture, finish the avocado toast with a sprinkling of toasted seeds, crumbled feta or quick-pickled onions. Fresh herbs such as coriander or chives are another easy way to change things up.
  • To make this into a more substantial breakfast or lunch, we'll add a poached or fried egg, smoked salmon or some roasted tomatoes and sautéed mushrooms.

Method

  • step 1

Cut the avocado in half and carefully remove its stone, then scoop out the flesh into a bowl. Squeeze in the lemon juice then mash with a fork to your desired texture. Season to taste with sea salt, black pepper and chilli flakes. Toast your bread, drizzle over the oil then pile the avocado on top.
