A Deep South favourite beloved for its salty taste and inexpensive ingredients. Some supermarkets sell ham hock already slow-cooked and ready to go, which is a big time-saver. But, if you're using shop-bought, reduce the stock by 120ml.

Method

  • step 1

Put the ham hock, onions, garlic and stock in a flameproof casserole and cook, covered, for 2 hrs over a low heat, or until soft. Or, do this in a slow cooker for 2 hrs on high.

  • step 2

Remove the ham from the dish, and discard any fat. Shred the meat into chunky pieces, then return it to the dish.

  • step 3

Add the greens, 1 tsp salt and freshly ground black pepper, and bring the mixture to a simmer. Cook for another 10 mins over a medium heat, uncovered. After this time, stir in the vinegar. Serve in bowls with cornbread or other bread to soak up the juices.
