Test Kitchen tips for making this paella:

  • Once you've added the stock, don't stir the rice too much. Letting it cook undisturbed helps the grains absorb the liquid evenly and encourages a delicious golden crust on the bottom of the pan.
  • If you fancy a heartier dish, you can add sliced chorizo (which isn't classic) and chickpeas. Cut 150g chorizo into slices the thickness of a £1 coin. Fry for 5 mins until golden, then set aside, leaving its red oil in the pan. Follow the recipe as before, frying everything in chorizo oil instead. Once the rice is almost tender, stir in 400g can drained chickpeas and the fried chorizo, then cook for 5 mins more until hot through.
  • If you have leftovers, they should keep well in the fridge for up to two days. Reheat them gently in a pan with a splash of extra stock or water to stop the rice drying out, or in a microwave.
