Lemon crunch pie

- 8oz ginger biscuits
- 4oz buttermelted
- 1 small tin condensed milk
- juice of 2 lemons
- grated rind 1 lemon
- ¼ pint double cream
Method
step 1
Crush biscuits.
step 2
Melt butter.
step 3
Mix biscuits into butter.
step 4
Press into the base of loose bottomed sponge cake tin.
step 5
Mix together other ingredients except cream.
step 6
Slowly add the cream and stir together (can use fork or blender).
step 7
Pour onto crumb base and leave in the fridge to set.
