Cassie's tips for making the best homemade peanut butter:

  • I like to roast the peanuts before blending. Just a few minutes in the oven deepens their flavour and helps release the natural oils, making the peanut butter extra smooth.
  • Don't worry if the mixture looks dry or crumbly at first. I keep blending, and after a few minutes the peanuts release their oils and transform into a creamy, spreadable peanut butter.
  • If I want to switch up the flavour, I'll add a drizzle of honey or maple syrup for sweetness, a pinch of cinnamon or a little vanilla extract. For a crunchy version, I simply stir through a handful of chopped peanuts at the end.
  • Store the peanut butter in a clean, airtight container or jar either at room temperature or in the fridge. It keeps well for up to a month. If the natural oils separate over time, I just give it a good stir before using.

Method

  • step 1

Heat oven to 200C/180C fan/gas 6. Tip the peanuts onto a large baking tray, place in the oven and roast for 10 mins, stirring now and then to ensure they don’t catch at the edges. When golden brown, remove from the oven and leave to cool completely.

  • step 2

Tip the nuts into a food processor, and add the salt. Blend for 4-5 mins, until you’re left with a smooth nut butter, if you want to loosen the consistency, add a drizzle of oil and blend again.
