Lulu's tips for the perfect slow cooker lamb tagine:

  • Lamb shoulder is my first choice for slow cooking because its extra fat keeps the meat tender and succulent. Lamb neck works particularly well too, while diced leg is a good option if you prefer something leaner.
  • I sometimes add a drained tin of chickpeas towards the end of cooking. They soak up the spiced sauce and are an easy way to make the tagine stretch a little further.
  • This tagine freezes really well, so I'll often make an extra batch for another day. Let it cool completely before portioning and freezing in airtight containers or bags. Defrost thoroughly before reheating until piping hot.
  • For serving, I love spooning the tagine over fluffy couscous and finishing it with plenty of fresh coriander. Toasted flaked almonds or a spoonful of natural yoghurt are also delicious additions if I want a little extra texture or freshness.
  • If the sauce is thinner than I'd like at the end of cooking, I'll leave the lid off and let it reduce for a little while, or transfer it to a saucepan and simmer until thickened.
